La Festa di Cervellette
(Literal Translation into English: The Feast of the Little Brains)

Cervellatta (also written cervellata) is a sausage that originated near the city of Bari. It has traditionally been made with mixed meats. In the New York City area, cervellatta is often made with either pork or lamb. The word cervellatta comes from the Latin cerebellu (brain) due to the use of ground brain which rendered a softer texture.
